something about protease.

Proteolytic enzymes are produced by various bacteria such as species of Bacillus, Pseudomonas, Clostriduim, Proteus and Serratia. And those fungus that produces acid proteasis are as follows. Rhigopus sp, Pencillium Notatum, Mucor Meheii, Mucor Pusillus. Those fungus that produces Alkaline proteases are Aspergillus flavus, A. Oryzae, A. Sojae, A. Sydowi, A. Fumigatus, Pencillium cyano-fulvum, Alternaria tenwisima, Gliocladuim roseum.

Those fungus that producing milk clotting enzymes like Renin are Aspergillus candidus, A. Oryzae, A. Parasiticus, A. terricola, Absidia lichtheimi, Mucor mandahuricus, Mucor pusillus, Mucor spinecenres, Mucor rouxii, Rhizopus achlamydosporus, Rh. Batetae, Rh. candidus, Rh. chinensis, Rh. chinensis var liquefaciens, Rh. chinniary, Rh. Chungkuoensis, Rh. delemar, Rh. japanicus, Rh. Nigricans, Rh. niveus, Rh. nodosus, Rh. oryzae, Rh. peka.

The enzymes associated with these micro organisms are mixture of proteinases and peptidases. Proteinases are usually exereted to the fermentation medium during growth and the peptidases are liberated only on autolysis of the cells. Proteinases are of more commercial use than peptidases.

Production of acid carboxy peptidase was observed in the culture filtrates of Aspergillus saitoi by lchishmima (1969). The maximum enzyme production was reached after 4 days or more at 30°c.

In Streptomyces griseus and S. fradiae which secrete a potent mixture of exo and endo peptidases, a complex medium for growth and protease production is needed. The Rhizopus sp shows maximul proteolytic activity at a pH range of 3.0-4.7 and at the temperature range of 40-65°c.
